Its broad rectangular blade is finished with a mirror polish and sharpened entirely by hand using traditional Japanese ceramic water stones. The exceptionally fine edge allows the knife to glide effortlessly through vegetables and herbs, making food preparation faster, cleaner, and more enjoyable.
