Why Albacete Became Spain's Knife-Making Capital

Albacete's cutlery tradition spans centuries, evolving from medieval craft to a globally recognized industry. The city's name comes from the Arabic Al‑Basit, meaning "flat land." By the 15th century, documents already mention guilds of blacksmiths, sword makers, and knife makers—the foundation for a specialized craft economy.

The 18th century is considered the golden age of Albacete knife-making. Master craftsmen emerged, and the city became one of Europe's most important centers for cutlery. Folding knives (navajas) became especially popular, prized for both utility and artistry. The arrival of the railroad in 1855 transformed the industry—knife vendors famously sold Albacete blades directly at the train station, spreading the city's reputation across Europe.

The Spanish folding knife (navaja) became a symbol of identity, especially in La Mancha. Cuchillería Simón: Three Generations of Mastery

In 1947, the Simón family settled in Albacete, Spain—a city with centuries of knife-making tradition—opening their first shop selling traditional souvenirs and classic Albacete-style Spanish pocket knives. Due to high demand, founder Miguel Simón decided to focus the business entirely on cutlery.

Years later, the first Simón Cutlery shop was established in Madrid, just steps from Puerta del Sol, managed by Carlos Simón Ruiz from 1970 until his retirement in 2018. In 2006, Juan Carlos Simón and José Luis Simón—the third generation—joined together to run the current Simón Selección Cutlery shop, also located near Puerta del Sol in Madrid.

Today they offer more than 5,000 premium cutlery products, focusing on kitchen knives, multi-purpose scissors, classic Spanish folding knives crafted by the best artisans, sharpening systems, and ham-serving tools. The Simón PRO Forged line, along with the Simón PRO Micarta and Simón PRO Olive lines—each made entirely in Albacete from single-piece forged steel—represent their most sought-after knives worldwide.
