Simón Criollo Medium Knife – Stag Horn Handle
Crafted in Spain by Simón Madrid, the Criollo knife is a refined eating and sporting blade forged from Böhler N695 steel, known for its exceptional hardness, edge retention, and corrosion resistance. The alloy features a high carbon content (1.05%) and 16.70% chromium, ensuring durability and performance in demanding conditions.
The handle is made from selected, sanitized stag horn, externally pinned with eight steel rivets—no internal fasteners—offering a secure and comfortable grip. Each knife is paired with a vegetable-tanned full-grain leather sheath in rich brown, complete with a belt loop for easy carry.
This beautifully proportioned knife features a hollow-ground blade, hand-sharpened with a ceramic water stone, and fully hand-assembled, ground, and polished in Spain. It’s available in two sizes and two handle options: olive root wood or authentic stag horn, both meticulously finished.
